Slim(-mer) mini-pie (vegetarian) celebrating the feta cheese day!

There is a day for everything but this one is just silly. Yup its feta cheese day according to those that sell this product. Well here is an interesting way to use feta cheese, in case you decided to purchase some today. Pies have a lot of calories in them, which is too bad as they are yummy and very practical to bring to work/school. Here is my slim version that cuts back the calories by 50%!

My yummy mini-pies, picture taken today, mini-pie eaten today :) :) Iris’ delightfully slim mini-pies Pastry: 75 g margarine 1 dl quark 1% 2.5 dl flour 1 teaspoon salt Fill: 8 tablespoons finely chopped tomatoes 8 tablespoons white beans 50 grams feta cheese chopped into small cubes 2 eggs Do this: Knead the pastry and leave in refrigerator for 30 min Press the dough into 8 large muffin cups or minipaj molds. Bake quickly in the oven for 7 minutes in the middle of 200 C . Add then in 1 tablespoon tomato and 1 tablespoon white beans in every pie. Divide the feta cheese on all the mini-pies. Whisk the eggs together with 2 tablespoons water and pour a little on each minipaj. Bake in oven 20-25 minutes. Simple as that. And this gives you: 204 calories a piece, 7.2 grams of protein and 17.2 grams of carbohydrates and 11.5 grams of fat. The minipies are 15% protein. 51% fat (19% saturated) and 35% carbohydrates.
